Oyster sauce is a glossy, dark, umami-rich sauce made from oyster extracts, sugar and soy. Thick and slightly sweet-salty, it instantly perfumes stir-fries, vegetables, noodles, meats and fried rice. A little goes a long way to season and glaze foods. As it is naturally high in sodium, reduce additional salt; vegetarian “oyster” alternatives made from mushrooms also exist. Pairs well with sesame oil, garlic, ginger and soy sauce.
